Three Ways to Enjoy Pumpkin Spice Bailey's this Fall

If you are like me, the minute you walked into the LCBO this Fall season and saw Pumpkin Spice Bailey’s conveniently placed for all eyes to see, you grabbed it immediately. Bailey’s is naturally a must have for dessert cocktails and every time they come out with a new flavour I go a little bit extra making cocktails. Pumpkin Spice Bailey’s was no different. While this is delicious just poured over ice, it is nice elevating the liquor by combining it with other delicious flavours. I skipped over the pumpkin spice latte because it is a little over done, plus it is not difficult to add Bailey’s to a latte without a recipe. Instead, I came up with one shot, one cold, and one hot. 😉


I would describe the actual pumpkin flavour in Pumpkin Spice Bailey’s as pretty subtle, the “spice” stands out a little bit better. Still, I would call it pretty delicious, though I am a big fan of pumpkin spice things. I happened to have some Pumpkin Spice Kahlua, which I didn’t see on the shelf this season but had leftover from another year. I ended up using the Pumpkin Spice Kahlua in the cocktails I made that included coffee liqueur to get an extra kick of pumpkin spice. While I prefer the Pumpkin Spice Bailey’s to the Pumpkin Spice Kahlua, I found that the Kahlua had a stronger “spice” flavour where Bailey’s being cream based was sweeter.



 

Pumpkin Toffee Cocktail - serves 2


Ingredients

· 1oz Pumpkin Spice Bailey’s

· 1oz Kahlua

· 1oz Amaretto

· 3 oz Half and Half

· Ice

· Caramel sauce

-In a cocktail shaker combine ice, Bailey’s, Kahlua, Amaretto and Cream and shake.

-Drip caramel on the inside of glasses and fill glasses with ice.

-Pour drink into glasses and serve!






 

Pumpkin Pie Shots


-serves 4

Ingredients

· 2oz Pumpkin Spice Bailey’s

· 2oz Rumchatta

· 2oz Cream

· ½ tsp Vanilla Extract

· Ice

· Graham Cracker Crumbs

· 1tsp Honey

· Whipped cream

· Cinnamon

-Put honey on a plate and dip tops of shot glasses.

-Roll honey covered glass rims in graham cracker crumbs.

-In a cocktail shaker combine Bailey’s, Rumchatta, Cream, vanilla extract and ice. Shake.

-Pour into rimmed shot glasses. Top with whipped cream and a shake of cinnamon.





 

Pumpkin Spice Bailey's Hot Chocolate


-serves 2


Ingredients

· 2 ½ cups of Milk

· 3 tblsp Cocoa

· ¼ cup Sugar

· ½ tsp Vanilla Extract

· 3oz Pumpkin Spice Bailey’s

· 1oz Crème de Cacao

-In a saucepan add sugar, cocoa, vanilla extract and milk over medium heat. Whisk.

-Heat until ingredients are dissolved into the milk (whisking occasionally).

-Once mixture reached desired temperature remove from heat.

-Mix in Bailey’s and Crème de Cacao. Serve and enjoy!
